as you all probably know, cooking is not something i am very accomplished at. i’m not terrible, and i make pretty good pasta and mexican food, but until recently i considered fruit toast one of my greatest culinary achievements.
the discovery of different microwaved desserts pleases me greatly. over time i’ve amassed many of them in paper form or in documents, stowed away in the deepest corners of my computer, and have even come to mix some of them together and create vegan versions…which i suppose is how many recipes are born!
these are the ingredients:
- 1 teaspoon of egg replacer/equivalent (or whatever your egg replacer specifies)
- 1 tbsp. white sugar
- 1 tbsp. brown sugar
- 1 tbsp. melted dairy free butter
- a dash of salt
- 3 drops of vanilla essence
- 1/4 cup flour
- 2 tbsp. vegan chocolate chips
In a bowl, mix together the butter, sugars, vanilla, and egg replacer. Add in the flour and salt, then add the chocolate chips and mix until it’s all combined. Put the dough into a small microwaveable bowl, ramekin, or coffee cup. Microwave for about a minute or until it has risen and looks complete.
it rules the most when it’s warm and the chocolate chips are melted. i don’t feel like i have to explain why.
